Simple Grilled Asparagus

Asparagus SpearsThis recipe is an easy, delicious accompaniment for the Grilled Portobello Burgers I posted in January. I usually start these marinating at the same time as the portobello mushrooms if I’m making both dishes together. I don’t usually measure ingredients out on a dish like this, so this is my best guess at the approximate ratios – you can adjust it to your taste.

SIMPLE GRILLED ASPARAGUS

1 bunch fresh asparagus spears
3 T. olive oil
2 T. soy sauce

Wash the asparagus spears and trim the bottoms. Place the asparagus in a shallow bowl or pan, and drizzle with olive oil and soy sauce. Cover tightly, and let sit at room temperature for at least one hour.

Place asparagus spears on grill or a foil-lined baking sheet under the broiler. Grill, turning occasionally, until fork tender. Enjoy!
